Pork Tenderloin Sliders with Goat Cheese

"Slide" into summer with these delicious pork tenderloin sliders.  Top off these unique little sandwiches with some goat cheese for a truly seasonal culinary delight.

What You Will Need:

•1 Smithfield-Farmland® Pork Tenderloin

•1 teaspoon salt-free garlic and herb seasoning

•4 oz. (1/2 cup) soft goat cheese

•1 tablespoon chopped fresh basil

•1 teaspoon lemon juice

•½ teaspoon minced garlic

•Pinch black pepper

•12 mini rolls (1 1/2-x-2-inches), split and toasted

•Roasted red bell peppers

•Field greens

What You Will Do:

•Heat charcoal or gas grill to medium.  Sprinkle all sides of pork with seasoning.

•Grill tenderloin 18 to 25 minutes until internal temperature reaches 150oF.  Let stand 10 minutes before slicing.

•Meanwhile, mix together goat cheese, basil, lemon juice, garlic and black pepper until creamy.  Spread goat cheese on bottom of rolls.

•Thinly slice tenderloin and place on top of goat cheese with roasted red pepper and field greens.  Close roll to serve.
